Easy Peasy Creamy Pasta

This one is so easy!
You will make it all the time.
Ingredients needed:
pasta-farfelle or cheese tortellini
1/2 block of cream cheese (try goat cheese for more zip!)
1/2 a small jar sundried tomatoes
1 small bag frozen spinach (or lots of fresh leaves)

*Optional ingredients:
sauteed shallots
roasted eggplant

 Start your pasta going, get that water boiling!
Then, in a small pot with lid, on medium start cooking your spinach.
If it is frozen, but in half the bag, let it cook down, then add the rest. 
Cover with lid to trap moisture while it thaws out. 
After spinach has softened, stir in sundried tomatoes.
*Optional ingredients add now as well.
Cube your cream cheese and reduce heat to low.

Stir in cream cheese 2-3 cubes at a time.
Constantly stir and keep heat low!
Once completely softened (not melted) remove from heat.
If it gets too hot, it will melt down to greasy nothingness.
You want to keep it thick and creamy.
  Drain cooked pasta, return to pot, gently stir in spinach mixture.

Depending on your pasta, this is a meal ready in 10-15 minutes.
Can't beat that, right?  
  Another yummy variation is to do just the cream cheese and spinach, with tortellini, served chilled.
