Lemon Garlic Chicken Pasta {recipe}

 Fast, simple, and light.

Ingredients Needed:

As well as:
Lemon Juice
Chicken Broth
Olive oil
Cooked, chopped chicken 
(½ chicken breast for each adult)

Sautee ½ of one sweet onion along with 5-6 Tbsp garlic in olive oil.
Add in a pinch of red pepper and 2 crushed bay leaves.
 When onions are glassy, add chicken.
Stir in ½ cup chicken broth and ¼ cup lemon juice.
Simmer on medium heat for 15 minutes.
Cook pasta while chicken simmers.

Toss chicken mixture with cooked/strained pasta.
Sprinkle with 1 bunch parlsey (chopped)

 That's it!
It is very light, but flavorful.

A variation:
Before adding chicken mixture to pasta, stir in bread crumbs until moisture is absorbed. 
My kids love it with the bread crumb method.
